Does anyone know of any decent courses in woodwork/carpentry courses available in Galway?

I don't think such a place exists particularly due to insurance issues.

There is one in Cork which is presented as the first one in Ireland.

GTI might be a good point of contact as they are based in Galway and have run Furniture/wood based courses in the past.
