    Is this strictly neccesary as in can I cook the meat and eat the leftover a day or two later.

    Not a problem as long as the cooked meat is properly refrigerated and reheated safely before you eat it.

    Yes. What they mean is that you shouldn't open the pack and then leave it sitting in the fridge unsealed.
