    Hi

    I am wondering what do you bring to work for lunch??

    I am trying to get some ideas that are not full of bread.

    I never had quorn sausages cold the next day..........woul dthey still be ediable??

    Of course! Everything tastes a bit different cold, but if you like the taste, that's fine! I know someone who enjoys the seasoned tofu you get in the healthfood store cold. I think it's the strangest thing!

    Today I have a yummy brocolli and stilton soup with brown bread but you could always have a salad/ryvita/rice cakes with it instead.
    I had spinach, cauliflower and sweet potatoe soup last week.
    I like butternut squash too :D

    Avocado, lime, chilli flakes & mayonaise mixed is yum on rice cakes/ryvita.

    Greek salad: lettuce, red onion, sundried tomatoe, feta cheese olives

    Left over dinners like a curry/ bolognese/ lasagne heat up well with salad.
    Omlettes are nice too :) you could add potatoe to make it more filling

    Edit there's also cous cous, rice, or pasta salad.

    Two of my favourites are cous-cous with veg, and corn cakes with hummous and crudités (peppers, carrots etc. cut in strips and eaten raw).

    The first is so quick and filling for lunch, it's great if I have a long day and will be home late. I add salt, pepper and a flavoured olive oil to the dry cous-cous then put it in a container and just add some boiling water from the kettle in work and it's done in minutes and soooo tasty (good protein source too!). I also have a container of frozen peas, corn, soy beans and just bung it in the microwave for about two mins then mix the cous cous in. Might be a bit plain for some, but I love it!

    Also, hot damn, do I love different chutneys for sandwiches! I started using brown or flavoured wraps/tortillas instead of (boring) bread. Pitta bread is nice too.

    Jeez, I'm starving for my lunch already!

    I normally just cook a little extra of whatever I have for dinner and bring the leftovers to work. Anything really, from salads, to soup, to rice dishes, to pasta.

    Today I have a three bean curry with rice in my thermos and cous cous flavoured with coriander, cumin, veg stock mixed with red peppers in my lunchbox.

    I've had quorn sausages cold in a pitta with spinach and ballymaloe relish, its lovely.
