Accepting a job

I went for an interview with a VEC a few weeks ago and the principal called to offer me a job. However as it is a maternity leave for a short time, he told me that he understood that I might be looking for other posts and if I got a job somewhere else to just call and let him know out of courtesy.

I then got a letter from the VEC who asked me to confirm in writing whether I would like to accept the job.

My dilemma is this- I have an interview next week and another one after that and am holding out for these as they would be more suitable posts for me. If I accepted the original job in writing, am I tied down? I won't have signed a contract and the principal did say that to me.....

Just send the letter for now . Not tied to contract yet.
