Frozen Veg

    OK so I am now eating veg...............frozen veg.

    I was not the biggest lover of veg so this is a gradual thing for me in order to get healthy.

    Now about cooking it. I have been told that boiling can take the goodness out of them so what I have been doing is cooking them in a wok with flora spray. The veg is superquin mixed frozen veg (mainly peas, then carrots, green beans and sweetcorn). I have two portions a day. I cook loads for dinner and keep some the next day for lunch which i have with beef or chicken or fish which i heat in the microwave in the office.

    Am i ruining the veg by frying it? and for lunch by reheating it in the microwave?

    I aim to move onto fresher veg, hopefully salads etc once my pallet has adjusted.

    steam it, its the best way to cook veg and you retain nutrients better than the other methods. I got a cheap electric steamer and its the business

    I was under the impression that steaming was the same as boiling?

    If I steamed the veg how would heating it in the microwave affect it the next day?

    Steaming once its not steamed for hours is the best way, but seeing as your only eating veg recently i would say the best way is the way you enjoy the veg most. Stir frying is great too btw.

    Just to let you know that frozen veg is full of nutrients and vitamins. It's usually frozen withing 7 hours of being picked so it is actually healthier than veg that is lying out in supermarkets all day. Same goes for frozen berries etc....

    A lot of the nutrients are lost during the boiling it's the effect from the water, with steaming it's no direct contact with water so the nutrients are not drained away (I believe that's it!).
    If your worried about loosing nutrients How about taking a supliment?

    with a bit of flora spray is ok
    as long as it really is "a bit" - they should not be swimming in loads of oil at bottom of wok :)

    Note on steaming, if you steam them for too long they also turn to baby food style mush, that is also not good [you will notice the water under your steamer turning green [or whatever colour your food is] - a bit of that is the "good stuff" floating there, no longer in your veg :pac:

    One more thing..........if i cook them in a little flora spray (dont worry they aint floating in the stuff) should I let them cool over night in lunchbox and then seal them the next morning for lunch or should I leave in fridge??

    Its just I heard that by taking something hot from a pan and sticking it in the fridge aint healthy? Maybe I am wrong.

    The main thing is I am eating VEG!!!! woo hoo

    Now for salads

    Putting something hot into the fridge isn't unhealthy as it won't harm the food itself, but it is possibly a hygiene risk because it can raise the temperature of the fridge.

    If it's a small lunchbox of warm food it's not a big deal but a large quantity of really hot food might be a problem. Depends what else you have in there really. Maybe also on how good your fridge is.

    Just leave the lunchbox cooling on the worktop for an hour or two, or if you don't have time then leave it sitting in an inch or two of cold water for some minutes. You could leave it out overnight but that could also be a hygiene risk, depends what the food is and how warm your kitchen is.

    Basicaaly it comes straight from the wok into the lunch box. i leave the lid lying on it but nor sealed so that nothing falls into it bit there is enough room for the heat to escape and for it to cool down.

    So I guess I am ok then

    Yeah sounds fine but ideally it would be best to seal and stick it in the fridge after a while, for overnight.
