Vegetable Soup help

    Hi all.

    I'll start of by saying i dont eat veg :(

    But i had a Vegetable soup the other day that was lovely..

    I'm looking for help on how to re-create it.

    It was in a pub so i didn't ask them how it was made.

    But there was no big chunks of veg.. so it was blended up pretty well.

    it was basically white with a hint of green in colour.. also has little black dots in it.. might have been dark green

    How can i remake this soup.. what will i put into it.

    It is just normal veg soup only blended really really fine. ?

    any tips would be great.

    Sounds Like Broccoli Soup. Google for a recipe.

    Could have been cauliflower and brocolli soup maybe.

    Veg soup v easy to make OP. Just get yourself a cheapo handheld whisk and you can blend anything down to your preferred texture of puree. Experiment a bit and you should be able to find a couple of recipes you really like.

    might have been leek and potato soup, with a sprinkle of black pepper, easy peasy to make. Don't be afraid to experiment with veg soup,you cant go too far wrong boiling up some veg and liquidising it!

    This soup tastes amazing and it's really nourishing. It's a real favorite in my house.


    My favourite soup is Broccoli soup.

    Ingredients

    1 large potato

    1 Large onion

    1 Large head of Broccoli

    1 & 1/2 pints of chicken stock, home made is preferable.

    1 clove garlic

    Knob of butter

    Cream


    How to make...

    Chop the onion & Garlic (finely) and fry in the butter on a medium heat until the onion has softened.

    Add the chicken stock.

    Chop the potato into small pieces and add to stock.

    Bring to the boil and let simmer for fifteen minutes.

    Add the broccoli.

    Cook for another 10 mins or so until the broccoli is cooked.

    Leave to cool for a while and then blend with a hand blender.

    Add salt and pepper to taste.

    Add as much cream as you need to make it nice and creamy


    You should be left with a lovely bright green delicious soup.

    I've never seen white broccoli soup!

    I'd say it was potato and leek too, but usually that would be advertised as such, rather than just "vegetable soup".

    Would there have been mushrooms in it, if it had more than one type of vegatable then it would have to have been classed as veg soup, you could always ring up where you had and ask them
