Im currently in the process of singing an agreement to be an agent/dealer in Ireland for a company in Europe. It is a revolutionary new produst thatw ill solve a lot of trouble. (Im currently not in a position to disclose what the business is) But I have to get all my own clients in Ireland, aiming for big names and big government agencies, but I am worried that once I sign this that I could be told to shove over and another person could start selling the product in Ireland too and use the customers I acquired.
I feel I wont have territorial rights to distribute this and I am worried I will leave myself open to exposure from other "agents" coming in and reaping the rewards from my work.

What would ye do if you were in my shoes to cover myself? All opinions welcome.

If you are passionate about the product and know it will sell work hard and strategically, move fast and stay a step ahead. Worry about these kinds of when the issues begin to arise.
If you start doing numbers you will build up faith with the client and you can always renegotiate.

Is it possible for you to be come sole distributor in Ireland?

As ssbob suggested you should look to add a clause to be the sole distributor in Ireland. If you are the first to offer the product then you may have to invest some money to develop the market. On that basis its not unreasonable to request exclusivity for at least a period of time or until sales have reached a level where you can re-coup the costs.

In fairness it should be difficult for another newcomer to take your customers if you are providing good value and service.
