I bought it factory unlocked and direct from Apple - how do I go about getting them to sort it? Is there a store I can bring it in to? I'm based in Dublin.

Also, I have it jailbroken - is there a way I can return the phone to not being jailbroken before I do something about it dropping calls as I don't think they'd be happy me returning it jailbroken!

just do a restore in itunes and it will reset it back to factory for you or use a backup. Regardless jailbreak will disappear.
Since you bought direct from Apple (have you tried another sim from anotehr provider? ) you should contact Apple directly.
Don't use a store unless Apple direct you to use it as it could invalidate your warranty.

Which carrier are you using it with? VF had some serious issues with the iPhone 4 dropping calls.

...and it's Vodafone I'm with. Is there anything I can do?

I don't know if it was resolved. There was a big thread on it a while back - do a search on "vodafone"
