In Ireland is there any way of making a person prove the allegations they make in civil court are true rather than me having to continually disprove them?

It's the tort of defamation. Look at the Defamation Act 2009. If you take them to court then they have to prove the truth of the allegations as a defence, you don't have to show that they are untrue. You would have to show that they published a statment which would tend to lower your reputation in the eyes of reasonabel members of society.
