selling indian cuisine from market?

    Hi,
    A work colleague of mine is interested in selling some home made food from a farmers market or market.
    The food his wife cooks is out of this world as he usually bring some into work for us to sample :D

    How would he get started in a market or are these a closed shop?
    I assume licences are needed, health inspection etc?

    The food would be mainly, bhaji's, samosa's etc.

    Any advice greatly appreciated.

    Alright Sham69,

    I think Farmers markets are pretty straight forward about things like that. The best advice I could give would be to go and speak to a farmers market organiser and they will give you advise on all of those things.

    If she's cooking meat etc they really need to speak to the local Environmental Health Officer, to ensure that their kitchen is suitable for making these type of products and that they have all the correct procedures in place.

    Do they plan to sell her food hot at markets? That would have to be regulated too. Most markets will look for HSE certification at least, a lot will also ask for product liability insurance, which is really especially important when selling food that contains meat, allergens or products that are kept heated for periods of time.

    Thanks for the replies folks.
    I guess the food would be cooked fresh at his home and then brought to the market.
    He is still trying to find best way of keeping the food hot/reheating etc without losing the freshness (or poisoning someone).
    He asked a guy at a farmers market but he wasnt very helpful.
    He said he could sell his stuff but wouldnt allow him to use electricity.
    I suggested a generator of some sort.
    I also told him to go to a decent market, buy some food from a stall and ask the guy selling, he might give him a few tips.
    The food is amazing so I have no doubt it will sell but obviously he wants to do everything by the book.

    That's odd about not having electricity, any markets I've done or considered doing had options for stalls with or without electricity. If they speak to their EHO they should be able to advise the best/accepted ways of keeping the food heated to an appropriate temperature.
