Thinking of cooking a Thai Red Curry tonight

    Just after trying out this Red Curry
    Was pretty happy with it :)

    Bought a thai red curry pack from super valu and cooked it at the weekend. It basically had raw ingredients for you to make your own paste:

    6 red chilis
    2 sticks lemongrass
    garlic (use 3 cloves)
    Lime juice and zest
    Ginger
    Galangal (like ginger)
    2 shallots

    Lash them all in a processor and whizz up. Had to add some oil, cumin and coriander powder.

    Cooking the curry was then just stir frying the meat and veg, adding a can of coconut milk and then chucking in the paste to taste.

    Pretty good!

    If you don't want to make your own paste, the Thai Gold red curry paste is the best I've tried.
    You just add a few teaspoons, along with any other spices etc you want to add in to the mix, then add the coconut milk at the end.

    Their fish sauce is good too. Usually add a few teaspoons of that as well, for flavour.
