Non-dairy milk suggestions for pancakes

    Am off gluten and dairy for a while and am looking to make some pancakes. I have buckwheat flour which I've used successfully before but I usually use cow's milk for the batter. What would be a good substitute? Rice milk, soy milk or maybe even coconut milk?

    Any ideas would be welcomed, thanks.

    Water and more eggs? I like lots of eggs in crepes anyway, but I think you could get away with extra eggs and water. Worth trying anyway. I'd definitely try it before rice or soya milk.

    I use water in my (oat flour) pancakes, don't see why it won't be ok with buckwheat

    I use water in mine too, but I'm adding in whey and cottage cheese, which makes the water somewhat milk like.

    Tried this out last night and it worked a treat, thanks. Added in a mashed banana and some sunflower seeds and it was fairly awesome.

    I dont know what in the dairy you cant have, but if it's lactose you can get lactose free normal milk

    I use oat flour (whizz rolled oats in a food processor or grinder) with coconut milk and egg (or sometimes just egg yolk). I sometimes whisk egg yolks and fold them in to the rest of the 'batter' to make them lighter. I will also add ground almonds or dessicated coconut too, if there's a bag open. Serve with berries. I make the batter quite thick. They take longer to cook than 'normal pancakes'.

    Try coconut flour or almond flour with eggs and coconut milk, best pancakes ever!
