Connecting flight

I have a round trip ticket from Cork - Amsterdam - Cancun and return.

When I'm on the return leg I want to get off at my connection in Amsterdam and buy a cheap one-way ticket to finish the journey a few days later.

My question is, should I let the airlines know of my plans before hand?
I will be travelling with checked in luggage, how difficult will it be to get my luggage at Amsterdam?

    Thanks in advance

If you let the airlines know and try to get the ticket changed so that it ends in Amsterdam, that will trigger a reprice and most likely push up the fare. So the best thing would be to just not show for the last leg. However, that would require you to check in your bags only as far as Amsterdam when returning form Cancun. It will depend on the person operating check-in that day whether they do this for you or not. So it is a bit of a gamble.

The difficulty will get getting your bags. I'm not sure it would be possible.

If your bags do end up being checked in all the way to Dublin and you don't show up for the flight having done a runner out of Schiphol you may end up delaying the flight for others as they'll have your bag on it without you - which could lead them to suspect a bomb, which could lead them to blow up your bag and lots of explaining for you to do.

If your bags do end up being checked in all the way to Dublin [...] you may end up delaying the flight

This is exactly why the entire stunt works only if OP convinces staff in Cancun to check the bags to Amsterdam only.
