Spelt is a type of wheat that is older than regular wheat and less modified for optimum growing and profit. Some people call it an ancient grain since it has been eaten for a long time compared to regular wheat. A lot of people think it's healthier than regular wheat. In my experience it is gentler on the stomach but I still don't trust it. It can be tolerated by many people who get problems from eating regular wheat (but it's not gluten free). For example some people with IBS find spelt bread better. I've had a few different kinds of spelt bread, it's very tasty and similar to regular bread but somehow different.
