Oil change can be reset once via the display but service reset needs vagcom (unless there is some button pressing sequence that I dont know of).
Also, your service interval can be set to fixed mileage or flexible service intervals. Vagcom also allows you to change between these, allows you to input whether longlife oil is used, max intervals etc.

I have a vagcom diagnostic tool but it doesn't seem to reset the service on the new models.

I would have thought that would work. Maybe it needs an undate to handle your car but if you were paying that much cash, you should have bought a genuine VAGCOM. Mine was 60 or 80 euros but is not genuine.

I've tried to get an update, but there hasn't been one since I bought it!!!!
Where would I get a genuine vagcom? - link?

To buy: Rosstech in america (its now called VCDS instead of VAGCOM) or there is a uk distributor, cant remember the name.

If your own tool is relatively new, I feel it should work. Can you get clarification from manufacturer if it will do the job on your car?

The manufacturer of my scanner says that "The newer vw/audi need the UDS protocol which RDT55 cannot support."

That's pretty crap given the cost of it. Lots of people here with vagcom or similar that would do it for the price of a pint I'm sure if nearby.
