Just wondering what expences can be claimed?

Also have a receipt for a plumber but is only a docket from a receipt book bought in a shop. Has amount date and signature. Is this acceptable?

You need to read IT70, which has all the answers:

On a general note, income tax is dealt with by self-assessment. So you calculate your tax and pay it. Revenue may audit your return at which point you have to be able to justify your claims for expenses. A hand-written docket without the detail required by S. 885 Taxes Consolidation Act 1997 might not be accepted. Revenue like to be able to ensure that the expense you claim has been returned as income by the plumber.
