    Self Build now has roof on and windows in, therefore watertight. However on some evenings (and especially during the recent cold spell) the bottom of the hollowcore slab was very very wet... is this purely condensation or is there other problems I should be wary of.
    The water droplets (plenty of them) also occurs on some walls ans steel beam also?

    You havent insulated fully yet. But when the build is fully insulated it is worth getting a laser thermometer. If internal surface temps are about 8-10 degrees, you will get condensation due to the high humidity as the building dry's out. However some of these are cold bridges, particularly the steel and should be fixed or placed on your contractors snag list.
