Roasted veg, healthy option?

    Hi all, I am trying to eat a little healtier after Christmas and reduce my calorie intake (aren't we all :rolleyes:). I am fine during the day, but I am struggling with my dinner. I really crave stodgy spuds, pasta and rice and plenty of them! Salad just isn't cutting the mustard with me in this nasty weather!

    I was thinking of making up a big batch of roasted veg, specifically, green and red pepper, tomatoes, onion and garlic (very little oil)

    I have two questions, would this be a healthy option for replacing spuds etc. And if I made a big batch, how long would it keep in the fridge, or could it be frozen in portions? Thanks in advance!

    Sounds good. I'm not fond of salad in the middle of winter myself.

    It's also worth making up a big batch of vegetable soup and having a bowl when you are peckish or before dinner.

    Throw in some cauliflower. fennel, chopped brussel sprouts, broccoli, courgette, aubergene etc as well.

    I doubt you'll make more in a batch than you can eat in a few days.

    Well roast veg (red peppers, red onion, garlic, mushrooms particularly popular combination) are a favourite of mine but not sure of their health advantages as a replacement for potatos, what is unhealthy about spuds?

    To answer your questions about how long roast veg will keep in fridge, I imagine 2 - 3 days but I could be wrong, I've never tested that theory, I would have them eaten long before that. :D

    If you are looking for an alternative to potatos, in any GI book I've read they recommend sweet potatos as a lower GI replacement and they are definately delish roasted.

    Roast carrots and parsnips with rosemary are also lovely and are more similar in consistency to potatos than peppers etc

    Veg is good for you no matter how you cook it really. You basically cannot eat too much of something like peppers/onion/tomatoes...they have virtually no calories and tons of good stuff.

    Hi guys, thanks for the replies, I made my roasted veg last night, red and green peppers, tomaotoes, red onion and a bit of garlic and chilli. It was yum! Just used a couple of teaspoons of olive oil, so hopefully not too fattening. It roasted down to quite a small amount so my worries about having loads left over where groundless. Have them well sealed in the fridge so should do me a couple of days.

    I'm not an 'anti spud' person, but my problem is portion size! I end up eating 2 or 3 and it really adds to the calorie content of my dinner.

    I adore sweet potatoes, but for some reason, only really have them on a Sunday as a treat! Will definitely be adding them more to my diet.
