    Hi there,

    I've recently been diagnosed as Lactose, Fish, Shellfish, Barley intolerant and Coeliac and am wondering if anyone else out there has dinner, snack or desert recipe's that would be helpful? Finding it really hard to find different things that i can eat and would love any help.

    Ok cool..here's a list of some of things i like:

    Any type of meat
    Curry
    Chicken Korma
    Pizza
    Chinese type foods

    As for deserts...I used to love caramel shortbread and most cakes/pastries

    Well for Chinese you can substitute most Thai food instead - Thai Gold is a good range, almost entirely gluten free - there was only one product I saw that wasn't but obviously things like Naam Pla/Fish sauce and oyster sauce aren't really suitable for you. For you the best thing will be the curry pastes and you just add the coconut milk or whatever that goes with it. It's really simple and really tasty. I throw in a pile of veg to bulk it up but obviously you could use rice or rice noodles (check the ingredients of the rice noodles). lots of irish people love massaman curry, because it's got potatoes in it! Chicken, beef, lamb and pork are all good in it.
    Some Indian is good too - Dunnes have a Simply Better Balti sauce for example that would be suitable. Tesco sell gram flower - made from chickpeas which you can make onion bhajis with.
    Soup will be a lifesaver - I make the butternut squash soup from Jamie Oliver. http://www.jamieoliver.com/recipes/vegeterian-recipes/superb-squash-soup-with-the-best-parmesa - obviously just leave out the croutons.

    Learning how to debone a chicken and to make chicken stock should be an ambition - full chickens are cheaper and go further and you can freeze the stock. An easy sauce for the wings is just to put some Franks hot sauce on them - it's really good and spicy but most people at home would soften it with butter to make a sauce - not an option for you. I'd have them with sweet potato wedges and some sort of salad

    Some of the auld Irish favourites would be easy enough too - roast chicken or beef with roast potatoes and veg is simple. Homemade gravy is easy - take the juices, add a bouillon cube (chicken or beef) and some cornflour (suitable for coeliacs) and stir as it cooks, then add some water and allow it to reduce. sauteed onions and mushrooms can go in to it too if you want.

    Pizza is the hardest - you can buy bases but they're not great in my experience. Homemade wise I haven't made it but this one got great reviews - http://coeliac.ie/webboards/viewtopic.php?t=1422. Join the coeliac society here as they have loads and loads of recipes on their website - some of which will be suitable

    Tesco have a Free From pancake mix that's largely rice based, some of the others are buckwheat based (you can eat buckwheat as it's nothing to do with wheat, it's from the rhubarb family). I like having them with maple syrup and bacon or a coulis (very simple to make) and caster sugar.
