    What to do with blue cheese other than a blue cheese salad / cracker platter?

    Steak with blue cheese sauce? Don't have a recipe, but I know it's been done and is tasty.

    Blue cheese dressing is lovely.

    Also, blue cheese and pear salads are delicious.

    Blue cheese cream sauce, (roast pumpkin) gnocchi and walnuts is nice

    You can also make blue cheese chocolate ganache as a centre for chocolate fondants

    Blue cheese and pineapple work very well together; maybe some toasted spice bread with blue cheese crumbled on top, and thin slices of pineapple

    Couple of portobello mushrooms, scoop out the insides, chop it up, mix it with some stuffing or just plain old breadcrumbs, season it to taste (ex virgin, spices, herbs) and mix it 50 / 50 with blue cheese. roll it up, pop it back inside the mushroom, and oven bake it on tin foil. Baste the top of the mushroom with the juices that come out to keep it moist.

    This is something I came up with from trial and error and messing around. Maybe use peppers too.

    Melt blue cheese with cream or some sour cream and use it as a sauce on home made burgers.

    Dennis Cotter has a recipe in one of his Cafe Paradiso cookbooks.

    Toast some soda bread - lay slices of avocado on the toast - top with blue cheese and grill. Finish with a squeeze of lemon juice.

    Not sure what kind of blue cheese you mean, but gorgonzola certainly goes really well on steak, as a pasta/gnochi sauce and on pizza.

    Dry aged striploins; cooked, rested, blue cheese on top and grilled for 1 minute. Serve with balsamic onions.

    If you want to make a sort of pate from the cheese for a steak or to add as a garnish to soup or even just on some fresh bread, put about 300g of the cheese in a food processor and blend for about ten seconds. Then add about 200ml of double cream and blend again for a couple of seconds.

    This will keep for a few days and can be added to lots of dishes.
