What to bring for lunch?

    I bring a packed lunch to work. I'm getting a bit sick of ham sandwiches and yoghurts. How can I mix this up while being economical and relatively healthy?

    I sometimes bring left over dinner from the previous night like stir fry and use a wrap. Lasagne, stew (use as a forfilling soup) with brown bread.

    Also I love Aldi cous cous get the hot and spicy just add hot waters and I usually put some raisins and there is a nice kick form it.

    I havn't managed a salad yet as I'd be afraid it would be soggy by the time lunch time would come around.

    Do you have access to a microwave/toaster/kettle?

    Instead of yogurt, try cutting up fruit into pieces - like those overpriced handypacks you see in super markets - for your 'desert'. Or I love creamed rice - just buy a big tin and then put a portion of it in a little container to bring to work.

    Instead of sandwiches - try salad with some crackers. The salad can be as varied as your fridge any combination from below works well, depending on your tastes, how organised you are and whats in the fridge:

    Leaves - lettuce/rocket/baby spinach etc
    cucumber
    tomato
    spring onion
    radish
    sweetcorn
    beetroot
    grated carrot
    And for the protein:little tin salmon or tuna/boiled egg/chickpeas/three bean salad/cheese

    Or there are a multitude of pasta salad combinations or rice salad combinations that are easy enough to prepare.

    Carrot sticks with dips (tesco do single portion packs of humous or you could make your own).

    Oat cakes with dips

    If you have access to microwave:
    Leftovers from dinner night before
    Baked Potato with beans/coleslaw/grated cheese/tuna/etc
    Soup
    Scrambled eggs on toast (if also access to toaster)

    If you have access to toaster:
    A toasted sandwich always seems more interesting than a non-toasted one and you can do them in the toaster with those toastie bags!
