you're probably sick to death of these questions at this point but anyway...

so we're suffering through the various water cut offs like most others. i can't work out what comes from the attic tank, what comes right from the mains, etc.

is there a standard way these things are done or is it just trial and error?

    thanks

    Most likely these days.

    Mains: Kitchen sink Cold/Washing machine/Dishwasher

Tank: Everything else ie hot water/pumped electric and power shower

However in a family of four there is 288 ltrs of water in the tank. Considering the adverage cistern is 8 thats 36 flushes or 10 flushes 10 sink fulls and a running tap for 5min.

Dont run the water to brush your teeth.

hot tap in the bathroom works, cold tap doesn't.

the shower (electric, but not electric heated) makes funny noises that suggest i should turn it off.

    the toilets aren't filling.

That means the cold wate tank in the attic is empty. This also feeds the hot water cylinder. The hot water cylinder isn't empty yet but has nothing to replenish it so will empty soon.

Sometimes tank connections are at different heights ,so either the hot or cold will stop working first.

The first part you asked for the workings this part you ask for an explination.

The hot tap works because it is taking it from the tank in the hot press. The cold does not because it is taking it from the attic tank. The hot tap will stop soon as it takes it from the tank in the attic as well.

Do not use the shower. It will most likely not work anyway. The pressure will be very low and there is a risk of grit which wont be good for it.

The toilets are not filling because it needs pressure build up in the line. This is going to take time.

To be honest there is nothing you can do but wait.

The HW Cylinder fills from the bottom and drains from the top. When you run out of water in the tank, you will not drain the Cylinder. The water will just stop as there is no pressure to push water into the tank and out at the top.
