Can someone point me in the right direction about how you change this data in the exif?

    Cheers

It depends on what software you use.

You can edit basic info in windows. Just right click and go properties. Select the details option and edit what you want.

You can also get Exif Farm that will allow to edit information in more detail. It will also allow you to also export and import information.

Since you're using CS3, you can edit within Adobe Bridge, from the Metadata panel on screen... click on the values you want to change and it'll let you edit. You wont of course be able to change some details, like serial number, exposure etc.. (not with Bridge anyway).

You want to change it or delete it? If you want to delete you could use exifcleaner or a hex editor. Depends what you want to do.
