I never see 8 ball pool that much on TV. Is the sport just more boring to watch than snoooker?

SkySports show a decent bit of 8 ball pool, a couple of 'World Championships' shown in one-match-a-week format throughout the year.

The simple truth, imo, is thats it not a particularly exciting game. Its very technical, the players are clever etc, but it doesn't really work on TV.
