    I listened to this yesterday on BBC radio, it was basically about UK deer & its value including the large quantity of deer meat that the UK purchases inclusive of a game dealers five thousand from Ireland. It is still available to listen to on the BBC I player/pod cast. It takes a few minuets to load on dial up but is listenable obviously broadband should be easier listening. Just remember this program was not made & broadcast for the fieldsports community but for the general public,anyway it may be of some intrest.

    They start out briefly stalking then a deer park for culling, they talk about the various species & problems with deer then selecting the best animal to take & dressing in the field & move on to preparation, cooking & marketing etc.

    Varieties of venison - wild and farmed - we can now find in butchers and supermarkets in the UK. She joins a stalker in Berkshire and talks to the biggest game dealer in the country.
