cooking healthy meals for college

    Hi All,

    i am currently in my final year of college and have slimmed about 102kg to around 89kg. I have been living off the local deli and healthy shops. However the days are long and I cant afford the 50euro a week food bill as i am leaving work soon.
    Iam planning on cooking and freezing my meals, then just taking them with me everyday.

    Could anyone give me some advice and some recipes that may allow me to keep up the weight loss and cook in bulk. Only requirement is not wheat

    Canned tomatoes + minced beef are a good base for a simple, quick, cheap freezable meal. You can add almost any kind of veg and you can alternate with rice or potatoes. I always have a big serving of green veg from frozen.

    One option would be to make big batches of the meat/sauce and then just cook up rice/potatoes/veg as needed.

    Some ideas:
    mince + tomato + spinach + olives + oregano + baby potatoes = nice Italian flavour dish
    mince + tomato + broccoli + kidney beans + chillis + rice = chilli con carne. can eat with cheese or sour cream
    mince + tomato + brocolli + chorizo + chillis + rice = so delicious, I love chorizo

    I heat this kind of stuff in a microwave but I reckon they would be fine cold too.

    edit: and some salt and plenty of black pepper is good in everything :)
