If it's easy to remove then I'd take the cover off.
Take wheel caps off so the wheel nuts can be seen.
Make sure all bulbs are working.
Remove any litter etc from car and boot.

You don't have to have the seatbelts fastened, you just have to have them all visible so that they can check that they work. Even if you do fasten them they will have to undo them and lock them again to check them. You will need to take the seat cover off if it's covering the lap belt though. Otherwise if he's in bad enough form he won't pull up the seat cover during the test himself to check it

the seat belts have to be accessible for the test, best to take off the covers (it would be a pain to fail for something so small); take off any wheel trims, and clear the car of teddies, etc......

any other things I should do??

PLEASE PREPARE FOR YOUR NCT BY ENSURING THAT:
Your car has adequate oil and water.
The boot is empty and seats are clear of all belongings.
The vehicle is reasonably clean (especially the underbody).
The wheel hubcaps are removed (only in the case where wheel nuts are not visible) and the tyres are inflated to the correct pressure.
The engine is in a fit state to be tested e.g. cam belt/timing belt. You will be asked to sign a disclaimer at the test centre.
All seat belts and clips are fully visible (including rear).
We also recommend that you have your lights checked and set prior to the NCT.
Your Vehicle Registration Book, Registration Certificate or Licensing Certificate is with you when you arrive at the test centre.
You have your test fee of €50.00 for a full test or €28 for a re-test, plus any cancellation fee (if applicable) payable by cash, personal cheque with bankers card (made payable to Applus Car Testing Service Ltd), credit card or laser card.
This letter of confirmation is brought to the test centre on the day of your test.
Please also ensure you bring identification (driving licence or passport only) with you as you will be asked to produce this when presenting your vehicle for inspection at the Test Centre.
If above items are not taken care of, NCTS may be unable to test your vehicle.
Please note that all re-tests must be conducted within 30 days of the initial full test.

Re-tests which require the use of test equipment will incur a fee and must be booked within 21 days, however it is advised that you make arrangements for your re-test as soon as possible to allow for additional re-tests to be conducted within the 30 days.

Re-tests not requiring the use of test equipment will be conducted free of charge, these re-tests do not require a booking, just simply arrange a mutually convenient times before you leave the test centre.

All you need to bring for your NCT is the car and money

A lot of car washes do pre NCT washes. TBH its only going to be an issue if the car is totally filthy, and going by your username I dont think you do be driving around mucky fields doing doughnuts...:D
