Pheasant Recipes

    Hello!!

    Does anyone have any pheasant recipes they could share with me? I was given one there last night, its in the freezer now cos I have no idea what to do with it. It will be first time to cook and eat it!!

    I made this the last time I had pheasant & it turned out great. It is a bit slapdash as I just made it up on the spot, but you'll get the gist...

    I stuffed the bird (a large cock pheasant) with a mixture of seasoned bread crumbs & finely chopped bacon, onions, sage & thyme. I moistened the stuffing with a squeeze of lemon juice.

    Then I thickly sliced 2 large eating apples & a large onion & laid these on the bottom of a roasting tray. I placed the stuffed bird on top of the apples, smeared the bird in butter & poured in a pint of good cider (Westons I think) in which I dissolved a chicken bullion cube. I then covered the tray in tinfoil - crimping around the edges to make a tight seal & bunged into a pre-heated oven (around 150C I think) for 90 mins. Then for 20 mins I upped the oven to 180C & removed the tinfoil to brown the bird. At this stage I also removed some of the braised apple & onion & mashed these with the juices & reduced in a separate pot over a high heat to make a gravy.

    I served the pheasant with roasted potatoes, parsnips & squash.

    oddly enough, i was recently given a pheasant too and had no idea what to do with it so its in the freezer.

    i think i might give this a go though, it sounds lovely. :)

    there is a game recipie thread on the hunting forum, has plenty of recipies for various birds, they can be swapped around for the most part using the pheasant in a wood cock recipe
