veggie dinner ideas

    i use to eat meat almost 7 evenings for my dinner.
    now have fish at least once if not twice a week now.
    would like to have 1 veggie dinner a week but not got a clue where to start.
    any ideas or tips please.

    Do a veggie curry. Heavy on any veg you usually like, and for the filling factor, substitute Chick peas for your usually meat of choice.
    A friend made one for me recently and I was surprised to find how enjoyable a curry could be without meat.

    I sometimes make a huge pan of ratatouille and use it to make vegetable lasagne.

    All your favourite veggies, chick peas, kidney beans and a tin of tomatoes and whatever your favourite herbs and spices are. Stick it in the oven and if you have time cook for about an hour on a low heat. Beautiful. Serve it with garlic and rosemary baby potatoes or pasta. Beautiful.

    You can make curries, lasagnas with just veggies. Veggie stir fries are very easy. Chick peas have a great texture, I find them a great substitute for meat.

    Chili made with Quorn mince. Lasagne made with same. Pesto pasta.
