I've been looking at 2 watches, I'd really like a Rolex GMT Master II but as I don't know much about watches i'm struggling to justify the price tag of of the rolex.

I can see a pretty similar looking watch the Seiko SKX009K2 , a divers as opposed to a pilots but i'm struggling to see any other differences.

    What's people's opinions on these 2 watches.

The Seiko is on sale for €150 down from 400, and the best I can see on the rolex is around €3,500

Not sure what you are asking here, but i don't think you can make a real comparison between the 2 watches as they look similar only for the bezel colour.
They are completely different in terms of movements, finish, functions (The Seiko is a diver with day/date, the GMT II has the gmt function and the date), history, prestige etc...
I know that those can sound only like irrelevant details but they would explain why the first one costs only 1/20 of the second.
Nevertheless, Seikos are really reliable and well built watches, if you like the look go for it!
if you are looking for a watch more similar to this Rolex at a fraction of the price you might go for a Steinhart Ocean 1

Steinhart is a german watch maker (not chinese), it offers good quality pieces and you get great value for money.

The "pilots" bit is just advertising stuff anyway. Even if a pilot was in dire need of a wristwatch for practical purposes, neither of those would be much use. The Seiko is a nice watch. Obviously the Rolex is a very nice watch. Lots of quality and would have a much bigger resale value, but me, I'd probably go for the Seiko on the initial cost alone

Rejoice in the awareness of feeling stupid, for that’s how you end up learning new things. If you’re not aware you’re stupid, you probably are.

Had a look at the Steinhart GMT Ocean 1

But I also noticed a very similar Debaufre http://store.debaufre.com/Gmt-Ocean-1-Black-p/g-dw.02.07b.htm I think there both the same watch.

They look as good as the Rolex, I'm just wondering now whether to get the 39mm or 42mm and what color combo.

I think Defaubre and Steinhart parted ways some tiem ago and there are some legal issues between them about design etc. now. I had that Steinhart watch and it is a fine piece but didn't suit me and I felt a bit odd having an hommage model! so i flipped it. 42 mm would be a decent size unless your wrist is smaller than 6.5 inches.
The Seiko would be grand and reliable and at the price very good value but the Rolex is an iconic watch with far superior movement and build quality. I suppose it would be like comparing a Toyota to a Mercedes.
But at the day if just driving from A to B in good style and safety the Toyota would be absolutely fine. Buy the Avensis :D
