Where can I get a kitchen knife re-handled in Waterford?

Hi, I have a nice kitchen knife that has a broken handle. I would love to have the broken plastic one replaced with a nice wooden one. Not to fussed if it's not balanced as it is fairly unusable in it's present state. I am in Waterford so any ideas around the south-east would be great!
