    He's pretty negligent with that drill too.

    Making cider/beer/wine is a pretty robust process. People were making all kinds of fermented beverages long before sanitation was a word.

    If he keeps being that negligent with sanitation it is only a matter of time before he ends up making cider vinegar, but that could happen even if you are sanitising correctly.

    You reduce the chances of infection with sanitary process, but that does not mean you are immune to it, nor does it guarantee an infection if you are slip shod.
