Try this: http://www.eatingwell.com/recipes/sesame_honey_tempeh_quinoa.html, or try it as a salad with 1 mango, 1red pepper, 2 scallions, 1 cup coriander, (all chopped) 2 tbs red wine vinegar, 2 tbs oil, and 1 cup black beans mixed into 2 cups cooked quinoa served on a bed of lettuce

I usually have it for breakfast. Just boil it in twice the amount of water until it absorbs it and then mix in a bit of pesto. Delish.
