Go into sound settings and make sure it's still set to output via hdmi, and then make sure ur cable is connected properly at both ends.

I had this problem with my ps3 (phat 40gb version). I currently have the sound going via the scart adapter and the picture going through the hdmi port. It may have been the lazy man's way of solving the problem, but it solved it.

    1. Put it into Standby
    2. Hold the power button [on front, not behind] for about 7 seconds until it beeps.
    3. Reconfigure your HDMI

    Does this work?
If not, use a SCART lead to see if you can get audio.

I am actually having a similar problem. I have an 80gb (fat) model - upgraded to 250gb. Recently i got a HDTV and am using it through the HDMI cable. sometimes when i turn on my PS3, there is no sound on the X-media bar menu but soemtimes i start up a game and it could take a few minutes for the sound to kick in. It's only been happening since i started using HDMI and dont know if it is something i should be getting worried about.

the odd time i have no sound i just unplug everything, plug it back in then its fine...my settings etc is fine i cant explain the problem but it only happens once every 20 times i turn it on so its not so annoying

..also i do agree i think its something to do with the HDMI cable as people said above.
