    Hi,
I am about to set-up a company based in Ireland, which shall solely be providing services to one US company, for work done around Europe, payment shall be coming in $, does this mean I do not need to charge VAT? My turnover will be in excess of 80 k euro.

No. There's no VAT on exports outside the EU. You should, however, be registered as your turnover exceeds the threshold for VAT registration. You'll be in the nice position of getting a cheque from revenue every few months for VAT incurred.
