Low(ish) carb ice cream

    I came across this food blog post on making banana ice cream with just one single ingredient - bananas.

    Basically you slice up the bananas, freeze them for an hour and then blend them until they have the consistency of whipped cream. After that you can add things like peanut butter or cocoa powder. Mm..

    OK, bananas aren't exactly low carb but it's definitely lower carb than standard ice cream and looks like it would be good for vegans/lactose intolerant types

    Bah you call that low carb! :rolleyes: I'm picking up an ice-cream maker tomorrow to try out a coconut milk ice-cream recipe I've been thinking up that should work, I'll let ye know when I try it! should be close to 100% sugar free too.

    I make my own low carb ice-cream.

    2 organic eggs
    60ml cream (or more if you want)
    sweetener to taste
    2tsp vanilla extract

    Whisk the egg whites till stiff and fluffy. Use a big bowl.
    Whisk the cream until thick.
    Whisk the egg yolks, sweetener and vanilla till smooth.
    Fold the cream and yolk mixture into the egg white until it is yellow all over.
    Divide into four containers and freeze.

    I swear, this tastes and feels like proper vanilla icecream.

    You can also make a chocolate version by using 2 tsp cocoa blended with a little coffee instead of the vanilla extract.

    I'm sorry, but I don't see it.
    That is in no way low carb. Bananas are almost all carbs.

    At a guess, i imagine that the icecream above and regular vanilla ice cream have about the same level of carbs, about 25g. The banana one would also be denser, small size per 100g etc.
    The banana one would have lower levels of fats and protein so the calories would be down. However, thats not useful for low carb is it.

    A better option would be Eileen's recipie above, or a commercial low carb ice-cream

    I still can't wait to try the banana one - the carbs don't bother me.

    Sap - let me know hpw the cocnut milk version one turns out. It might convince me to get an ice cream maker.

    Yeah I looked it up on NutritionData and I guess it wouldn't be that low carb.

    The banana one does have the advantage of having more fibre plus some people (myself included) like to minimise intake of artificial sweetners.

    Yep prob not that low carb but made with real food which gets my thumbs up.

    Those commercial low carb ice-creams are full of lots of nasty crap, low carb or no.

    Eileen, I'm going to try that recipe, I have made at least 8 failed batches of ice-cream in my maker.. I'm beginning to think it's a crap icecream maker, just freezes too quickly.

    This sounds gorgeous! I'm on a low-fat as opposed to a low-carb diet so I reckon one scoop of this would be a good Saturday evening treat! I wonder would it work well with mixed berries?

    I'm sure it would. Berries - yum.

    To continue on the theme of low-carb-but-not-very-low-carb desserts, this chocolate mousse recipe looks good if you use 85 or 99% chocolate and sweetener:
    Makes 2

    2 medium eggs
    60g chocolate (at least 70% cocoa)
    2 tsp sugar (or to taste)

    1. Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water. When the chocolate begins to melt, turn the heat off. Separate the eggs.

    2. Whisk the egg whites into soft peaks, add the sugar, and whisk briefly.

    3. Mix the egg yolks quickly into the melted chocolate and then whisk in a third of the egg white. Fold the rest very gently into the mixture until just combined (be careful not to overmix), and then put into bowls and refrigerate for at least four hours until set.
