road trip- what things to pack in on Sunday 1st?

Myself and a couple of friends are going on a road trip and will end up in Galway on Sunday. Can anyone suggest fun day activities to do e.g. scuba diving, any water sports, good sightseeing, quirky random things to do?? Also, where is the best place to go at night? cp, halo, cuba????
