1360x768 Best Resolution ?

    I have a 360 connected to Sony Bravia TV via HDMI cable
    I am getting 1360x768 /60 resolution when I play games
    Is this the best res or should I configure it differently ?

    Nope 1920 X 1080 (or 1080p) should be the best. Not sure why it's not giving you that option, may be the TV. You'd definitely notice a significant difference between that and your current setting.

    Is it connected with a VGA cable by any chance? Those resolutions shouldn't even be selectable if you're using hdmi/component...

    The highest resolution on a HD Ready tv is 1360x768 or 1080i. To get 1080p you need a Full HD tv. It's your tv that is limited by the resolution it can display.

    720p provides better image quality than 1080i.
    You TV has a max res of 1360x768 so it can do either 720p or 1080i.

    A TV capable of 1920x1080 can do 1080p which is better than than both and is full HD standard.

    For fast action, progressive scan is better than interlaced, hence the p and i settings. Interlacing images is slower as the TV has to render and interlace two images to try and provide a higher temperary resolution and there can be a bit of screen lag at times, not so with progressive scan.

    I personally find that with the Xbox, 720p is generally a better option than 1080p anyway, as 1080p tends to introduce a lot of screen tearing, which bugs the life out of me.

    720p is only better, because most games run in 720p anyways, rather than 1080i/p, well, unless it's a new game like CODMW2 etc.

    There is barely any difference between 1080p/i

    1080p updates the screen in one frame, where as 1080i updates the screen in 4 frames (divides the screen into 4 parts, and updates them, rather than 1 frame instantly)

    Most games are rendered in 720p natively and are only displayed on your TV in 1080p via upscaling. There are a few small exceptions to this but they're pretty few and far between. Modern Warfare 2, in fact, runs at lower than 720p natively.

    There is a very large difference between 1080i and p. You'll need a larger screen to fully appreciate it of course.

    1080i is composed of two 1920x540 fields which are combined to simulate a full 1920x1080 image.

    As Captain Chaos said above, a 720p resolution is also preferred for fast moving scenes so you'd be better sticking with that one OP.
