    just roasted the last leg this eve ,i ran out a month to early .got help the first yearling i see next sep .

    went i cook such a lovely meat as venison ,it brings home to me how lucky we are .
    the privilege to see a calf in june right through to the stalking of that calf in the winter .
    anyway this sika calf was lovely .

    jw.. do you prefer male or female calfs' meat or do you have a preferance if choice available? is there a noticible difference?

    All animals meat flavour changes in males particularry when they reach puberty.

    Ref: Ram lamb is horrible in late summer when he his 2pac have dropped ;)

    Any nice tips on cooking it lad. Have one in the freezer myself. A lad told me to run the rhine (spelling) of a rasher through it in spots ment to add to flavour!!

    The rind of a rasher will add flavour, and tenderness. (along with Salt and Calaries :D)
