Don't make them thicker than 1/4 lb'er thickness, much easier cook!

When freezing seperate layers with a few sheets of plastic so they do not all stick together.

Some butchers have bolanaise seasoning that is very tasty

    And enjoy!

I like a bit of garlic but not everyone does!!

cheers lads the mustard seed sounds nice
il give the butcher a shout to
i was reading that ya should add bacon fat
it helps them cook better as there is not much fat in venision

Yes and adds a nice flavour, if you can get boar fat it will be nicer again. Harder to get though.

I normally experiment with a few flavours of burger.

I once made monster burgers which were not nice at all as they had to be cooked in an oven.

A good Barbie and they are tasty.
I got 60 burgers out of a stag so I hope you are hungry :D

get some dunnes own brand sausage there 80% pork ,take them out of the skin ,mix them in with black pepper and a good grind of chili .

the less crap in them the better ,you can add it on when cooking .

i'm just after having some very tasty venison burgers, from a young pricket i shot last week on a section 42.
the missus does her magic on the meat after i butcher and mince it
she adds whole grain mustered, garlic, onions, chives, paprika,to the meat then she adds soya sauce to bread and one egg. mix the bread egg and soya together and allow it to soak in and soften the bread.
then add the meat to the bread and knead it together by hand and portion it out into burger sized pieces
now your all set for the tastiest burgers you ever had;)
    enjoy

I add some chopped green jalapenos to the mince, keeps it nice and moist and gives it a nice warm kick as well.

I buy pork belly and mince it into the venison. It minces well and adds the necessary fat so the venison doesn't dry out during cooking.
30% mince pork belly and 70% venison mince is around what I usually use.
I also like chopped sauteed onions and some light spice and Reggae reggae sauce.

As CJ said, get some pork belly and mix it in with the venison. Mince this through once only.

Make the following seasoning: mince a couple of spanish onions, mix with some flour, parsley, a heavy dose of ground black pepper and some salt.

Mix this in very well with the previously minced meat making sure that you get the seasoning mixed through ALL the mince. Now put the mix through your mincer again.

Now all you need to do is press out your burgers. Some grease proof paper between each burger will stop them from sticking together in the freezer better than anything.
