When I'm feeling really lazy I use tinned kidney beans or chickpeas instead of pasta, and just use the same sauce/pesto/cheese I would. It works best if you make it a few hours before you eat it, kidney beans are nicer when they're given a chance to soak up some flavour I find. Chickpeas are lovely cold with pesto as a snack. I hardly make anything without kidney beans actually, they are so cheap (34c in Lidl) and filling for relatively low calories. Throw them in curries too. Again, best left for a while before you eat it.

I use a good dollop of low fat cottage cheese instead of sour cream in fajitas. On top of the meat and kidney beans, that can be a very high protein meal!

I absolutely LOVE l.f. cottage cheese piled on toasted brown soda bread. If you like, chop up some cucumber and cherry tomatoes to top it. Absolutely lovely for breakfast or a snack. Cottage cheese from Lidl is the nicest, it's also cheap. The yoplait stuff isn't very nice.

Tofu, Quinoa and Chickpeas.. all super sources of 'non animal' protein.. i've started to add chickpeas to most of my evening meals.

I saw in M&S they had lots of different varieties of low fat cottage cheese - black pepper, pineapple (?) and prawn, which would up the protein and also a sundried tomato & basil variant.
