Healhty Sweet Potato Recipes

    Hi,

    Today I tried making roast sweet potatoes. I used about 150g of potato and 1 tbsp of olive oil (I know I shouldn't use it for frying, but is roasting okay?), sprinkled with black pepper, garlic, salt, and herbs de provance. It was absolutely delicious!
    Just wondering if anybody has any other nice recipes for sweet potato that are health and not too high in calories, or if anyone could suggest some other herbs/spices to roast them with?

    haven't much to add,made sweet potato chips with olive oil and sea salt last week, pretty nice. just curious is olive oil bad for frying? haven't heard this before.

    You could try making sweet potatoe and carrot soup. Add some cumin and cayenne pepper for a bit of a kick (or some chilli) and a dollop of creme fraiche at the end.

    You could also make sweet potatoe mash with a small knob of butter and serve with healthy greens and lean meat/fish.

    You could make sweet potatoe cakes (same method as normal potatoe cakes).

    You could make sweet potaote rosti.

    Yum!

    The mash sounds like a nice idea, though I'd probably end up eating more than one potato if I did it. As for the cakes, I love the idea, but don't really want to go adding flour to them.
    I made roast sweet potato with boiled asparagus, broccoli, and sugar-snap peas, and plain chicken breast tonight. It was yummy; the chicken was a bit bland, but I can't really think of a way to spice it up without adding to many calories/sauces with sugar and additives. I did sprinkle garlic and black pepper on top, which helped a bit.

    I sweet potatoes are supposedly better than regular.
    But are they are still pretty high in term of carb content/calories density

    To spice up a plain chicken breast without adding too many calories or too much sugar there are lots of things you can do. Such as -

    Smother it in cajun spice, cayenne pepper, garlic, salt & pepper before baking.

    You could marinade it overnight or for a few hours in a variety of ways (soy sauce, lemon juice etc)

    You could butterfly the fillet and stuff with spinach and low fat cream cheese.
    Or you could make up a healthy stuffing of broccoli, nuts etc and fill it with that.

    You could wrap it in high protein turkey bacon.

    You could simply sprinkle it with rosemary and thinly sliced garlic.

    I feel like chicken tonight....like chicken tonight!!!


    Oh and that mash is gorgeous with tehs weet potatoe but I'd always use 2 and eat the lot!

    Roast sweetpotato and garlic soup with rosemary is divine. I add chunks of sweetpotato to stews etc instead of regular spuds. You can also use it to make sweet dishes, like you can added pureed sweetpotato to porridge or make a sweet breakfast congee of pureed sweetpotato, coconut milk, nutmeg, cinnamon, sweetner etc and top it with some fresh fruit and toasted nuts or seeds. You can use it to make muffins and cakes too.

    I love the sound of adding it to porridge (my favorite food on Earth). Could you please tell me how you do it? Thanks :)

    I will try adding the spices you listed, sounds like it would make it a bit more interesting. I keep hearing about marinating, but am not really sure how to go about it; would I just leave the chicken to soak in lemon juice or soy sauce for a few hours? How do you 'butterfly' a fillet? I presume it involves slicing and filling? Those two suggestions sound DIVINE, I'd love to try it with garlic and herb cream cheese and spinach, or cashews and broccoli. I take it this would be cooked in the oven?
