I've always liked Rabbie Burns' one that goes:

    "Inspiring bold John Barleycorn
What dangers thou canst make us scorn.
Wi' tipenny we'll fear no evil
but with usquebaugh we'll face the devil."

    No neccessairly toasts but ...

    Old Irish Proverb

An té nach leigheasann im nó uisce beatha, ní aon leigheas ar.

What butter and Whiskey cannot cure, there is no cure for.

    and

Always carry a flagon of whiskey in case of snakebite and furthermore always carry a small snake.

Not a toast either, but I've always loved Eddie Condon's hangover cure: "Take the juice of two quarts of whiskey..."
