you can use screengrab - home and sleep buttons together to take a photo of them to your camera roll.

Have used phone view in the past. http://www.ecamm.com/mac/phoneview/

it allows you to save you SMS in various formats from what I can remember .txt and .xml are the two I remember sure there's many more.

It's not free though

screen grabbing it would be a pain in the hole as the screen can show like 10 messages max. that's 10 grabs for 100 one line messages.
