Advice with diet & new routine

    Hey guys,
    Was wondering if I could get some advice on my diet and also some suggestions for a new routine...
    I've been on a program for the last 6 weeks of:

    Assisted wide-arm chin-ups
    Chest Press
    Double Arm Row
    Shoulder Press
    Hammer Press
    Bicep Cable
    Tricep Cable
    Lower Back Extension
    Abdominal Crunch
    Decline Curls

    I've been doing that 4 days a week, 2 high intensity, 2 low intensity, as well as 2 days cardio. I've been taking a protein & carb shake after each weights session. I normally work out 1st thing every morning.
    My day-to-day diet is pretty abnormally timed at the moment because I'm spending so much time with college work and study so it's normally cold chicken roll (with cheese, lettuce, onions & mayo) around 1pm and my next meal is around 9pm or after where I have a full dinner of potatoes, carrots and maybe breaded chicken/fish.
    I'm 5'8 and 11 stone but in the last 6 weeks haven't put on any weight as I'd have expected to.
    Basically I'd like advice on:
    1. How to put up weight, maybe I should take more of the carb. and protein supplements through the day? (at the same time I feel I could stand to lose some body fat that I still have, will this just go naturally as muscle develops?)
    2. I know I should be eating more regularly during the day, what kind of stuff could I get to keep me going from a shop? Nutri-grain?
    3. Also, I'm getting a new weights routine tomorrow, any suggestions for upper body training?
