Can anyone recommend a good restaurant in any of the above-mentioned areas that serves (preferably) organic but at the very least fresh local produce? According to a restaurateur I was speaking to recently all restaurants buy from the same wholesalers and, unless advertised, have no regard for organic/local/fresh regardless of the price bracket the establishment falls in to.

If there is I wouldn't mind knowing either - lived in Monaghan now for 9 years and haven't come across that of which you speak
