Ray Cheeks?

    Can anyone tell me what are Ray Cheeks? I have been asked to cook them but I have never heard of them, I tried to google it and got a great recipe but I still dont know what I will be cooking!

    It's the cheek of ray or skate.
    I've never had them but I have had monkfish cheeks and they are really good - they're little medallions of fine grained fish meat.
    I'd guess that ray cheeks would be similar and similarly good - ray(skate)wings are one of my favourite fish!!
