Mimicking the IFSC food market for a University

Hi, I am doing a market research project for college and the task is to come up with a new service on campus than will result in profit. Its basically just a feasibility study of the proposed project and a SWOT analysis etc. So anyway I'm thinking of doing it on a proposed outdoor food market such as the one each week in the IFSC. I used to spend a lot of time in the IFSC last year but never actually got to use the food market. Anyway from what I saw there was a lot of very nice ethnic foods available and the cues seemed to always be long.

This project will never actually go ahead in my case as it is only a mock market research project but the idea has to be such that it is real. So I am thinking this could be a good idea for my project as I personally hate how bad the food is in college. Also for the money you are paying it would not be hard to produce much healthier and tastier food to students. Anyway just wondering if anybody here has used the IFSC food market in the past and if they could please tell me who controls it and whether they think it is profitable?

    Thanks
