Savoury Veggie Pancakes

    Ok so it's pancake day again and I will no doubt be stuffing my face later! I was thinking of having a savoury crepe for dinner though to use up some of the batter that I made up last night. Does anybody have any tasty filling recommendations? Thanks!

    Fried mushroom and peppers with garlic and lemon. Not exactly protein-tastic, but feckit it's pancake day!

    I like to use a bit of hummous, some baby leaf, a little relish and some feta. I'm planning on having this tonight. :D

    Hmm, odd, pancakes are usually with sweet dessert things.

    All my pans are knackered so it's sloppy vegan glop for me!

    Tastes like pancakes though.

    Haha no, I just like jumping around different forums. :p

    In saying that I've started eating a lot less meat and more veggie dishes. Had spinach, mushroom, red onion and mozzarella pancakes for dinner tonight and it was hard to beat. :D

    Never really thought about having a savoury pancake! These ideas are good though. I had mine with warm berries and a drizzle of agave nectar, and then had some with peanut butter and blackberry jam!! :D

    I had an interesting savoury pancake adventure today. Made them the vegan way with finely chopped carrots, broccoli and red pepper stirred into the batter. Added a bit of olive oil, salt and pepper and chilli flakes too. It was nice! I was kind of surprised.
