Rice Salads?

    Hey gurus! I have some brown rice left over from dinner - just wondering what can I do with it for a tasty healthy lunch tomorrow? Cheers :)

    Bit of chopped veg (any you want - sweet corn, carrots, cucumber, tomtaoes, peppers, onion, sproutes beans), any salad dressing you want (balsamic works lovely non creamy though) and you have lovely rice salad :D

    You could make fried rice.

    A little oil, sautee the scallions, garlic, ginger....whatever you have...vegetables, add an egg if you eat them, and scramble it in witht rice until it's cooked, some soy sauce, maybe a dash of sesame oil once it's cooked.

    Thanks for that guys! So I just lamped in whatever I could find in the fridge – carrots, peppers, tomatoes, onions, cucumber. And then i didn’t have time to get balsamic vingegar on the way to work but I had red pepper hummus which I threw in for the craic. It was very random but tasty and filling. I’m sure with a bit of tweaking one could make something very yum!!

    And nice idea with the fried rice – will defo try that with the next leftovers!

    ooops, sorry I didn't read closely enough to see you were looking for salad. Here's a absolutely great recipe from the Moosewood Cookbook called Sri Wasano's Infamous Indonesian Rice Salad (vegan.) It's probably something you would make when you had more advance time to get the ingredients. First tried it at my aunt's house, and my uncle, whose a total meat and potatoes guy, always asks her to make it. Sorry can't find it with metric measurements, but I never follow it exactly anyway.

    ps: You don't need to add that much peanut oil if you don't want to, and it still tastes great.
